Sambal Matah is an Asian fusion restaurant offering international cuisine, based on fresh and sustainably grown local ingredients. It’s located on the famous Goutama street in Ubud. Consistent with the vision behind the Biji World, to be a vessel between the Old and the New Bali, the restaurant combines authentic, passed through generations Indonesian family recipes, with international influences, resulting in both innovative and mouth-watering menu, curated by a renowned Spanish chef Alfonzo.
Ida Bagus Oka’s father once told him, that ‘living under the mountain, one never appreciates, how beautiful the mountain is. It needs to be seen from the distance’. Sambal Matah Restaurant is a reflection of those words, a ‘look from the distance’ at the original Balinese cuisine.
Sambal Matah is an Indonesian salsa/spice mix made from garlic, shallot, chilis, ginger, ginger flower, and kaffir lime. This spice base is used to enhance and anchor the flavors of many dishes served at Sambal Matah Restaurant, providing a starting point for a culinary world tour that reflects the combined efforts and experiences of three Balinese friends. The menu is a unique blend of the familiar and the unexpected and it introduces culinary characteristics from all around the world into Asian cuisine. The above ethos extends to the beautiful interior, which the owners have created to highlight the many intricate crafts and artistic traditions that exist in the archipelago of the Indonesian islands.
The story behind Sambal Matah is about the grand idea, determination, community and creativity of its owners. From the feeling Ida Bagus Oka always had, walking the Gautama Street, that he’ll one day open a restaurant there, to an opportunity of such arising, the partnership being formed, and one month, record speed construction, never seen on Bali before.
